The study, which optimized the blend ratios of pineapple juice (Ananas comosus) and coconut milk, found that a 71:29 ratio yielded the highest sensory scores, with a total suspended solids content of 13 ºBrix, a pH of 4.25, and a moisture content of 82.32%. This blend was not only well-received in sensory evaluations but also showed promising stability over a 14-day storage period.
“Consumers are increasingly seeking healthier, organic options, and this blend caters perfectly to that demand,” Kumara explained. “The combination of pineapple juice and coconut milk offers a unique flavor profile that is both refreshing and nutritious.”
